Pour the active starter onto a hot greased iron pan (I use the 8inch or 6 inch). The starter will be thick and airy. Spread the starter to cover the base of the pan. Lower the heat. Sprinkle ground sumac and Za'atar, salt for taste.
In a second iron pan prepare the omelet. I add some salt, ground black pepper, and sometimes chopped green onion (just scissor it over the omelet).
Turn off the heat and let them both sit covered for a few minutes.
Place the omelet over the flat bread and enjoy.
